Jessica Hord is showing us how to make a mouthwatering baked blueberry french toast. It's packed with juicy blueberries, sweet cream cheese, and topped with a generous drizzle of cinnamon syrup. This scrumptious treat is our new favorite dish here at RTM, and it will probably become your favorite too!

You'll Need:
— 12 oz. softened cream cheese
 
— 1/2 cup maple syrup, divided
 
— 1 tsp. cinnamon, divided
 
— 2 cups blueberries
 
— French baguette loaf cut into 1/2 inch slices
 
— 1 1/2 cups heavy cream
 
— 2 large eggs
 
— 1/2 tsp. vanilla
 
— 4 tablespoons butter 
 
— 1/3 cup brown sugar
 
Instructions:
1. Mix together cream cheese, 1/4 cup of maple syrup, and 1/2 tsp. of cinnamon.
 
2. Fold in blueberries.
 
3. Spread mixture onto one side of a slice of the baguette and continue placing each covered slice in front of the next, in even rows, in a buttered casserole dish.
 
4. Whisk together cream, eggs, and vanilla.
 
5. Pour cream mixture over the top of the slices of bread.
 
6. Cover with foil and refrigerate overnight.
 
7. When ready, preheat oven to 350 degrees and cook foil-covered dish for 35 minutes.
 
8. After time is up, remove foil and continue to bake for an additional 10 minutes.
 
9. To make the syrup: Melt butter and whisk in brown sugar, 1/2 tsp. of cinnamon and 1/4 cup of maple syrup. Spoon over plated slices of toast. You're done!

So, if there are no potatoes...does that mean we can have seconds? You'll Need: — 1 head of cauliflower  — 3 Tbsp. butter — 1 shallot, minced  — 4 garlic cloves, minced — 3 Tbsp. flour (Jessica used whole wheat flour.) — 1 1/2 cups milk (Jessica used whole milk.) — 1 tsp. salt — 1 tsp. pepper — 1 1/2 cups shredded Gouda, divided — 1/2 cup Panko breadcrumbs — 1/4 cup shredded parmesan cheese   Instructions: 1. Preheat oven to 450 degrees.    2. Cut florets from cauliflower stalk.   3. Bring a medium pot of water to a boil.    4. Add the florets to the water and cook until tender, about five to eight minutes.   5. Drain and spread out to an even layer in a two-quart baking dish that you've sprayed with cooking spray, set aside.   6. Melt butter in a medium saucepan over medium heat.   7. Add the shallot and garlic to the butter and cook for two minutes.   8. Whisk flour into the mix for three minutes.   9. Slowly pour in portions of your milk, continuing to whisk for five minutes.   10. Take saucepan off the heat and whisk in salt and pepper.   11. Fold in half of the Gouda.   12. Whisk in the last half of the Gouda.   13. Pour over cauliflower and gently stir florets into sauce. Spread into an even layer.   14. Mix together parmesan and breadcrumbs and sprinkle over sauced cauliflower.   15. Bake for 10 minutes or until top is brown. You're done!   Inspired by: With Salt & Whit  View Now
