Whether you're looking to cut more red meat out of your diet or you're just simply looking for a tasty, savory finger food, corn ribs will satisfy your cravings. Follow the recipe below! Makes 8 ribs 2 corn cobs 1/4 tsp each of ground cumin, coriander, turmeric, smoked paprika and sweet paprika 1 1/2 tbsp olive oil ¼ tsp salt Plain yogurt Spring onions Preheat your oven to 210C (410F). If the corn still have their husks on, start by cutting the tops and bottoms of your corn then place in the microwave for 30 sec. - 1 min. to help remove the husks cleanly (this step is optional so it can be skipped if you don’t have a microwave or doesn’t need to be done if the husk have already been removed). Stand the corn upright and very carefully, run your knife from top to bottom to split them in 2 halves then repeat to cut them in quarters. Mix together all of the spices and salt then add your olive oil to make a paste. Pour your spice paste all over the corn and massage until every kernel is nicely coated. Line the ‘ribs’ onto a baking tray and bake in the preheated oven for 20-30mins. Keep and eye on them because you want to char and caramelise on the edges but not too much. That's why our MVP Jessica Hord is here, and she's got an awesome recipe for "Super Sausage Sandwiches!" You'll Need: — 1/2 cup unsalted butter, room temperature — 1/4 cup finely chopped parsley — 1/4 cup and 2 tbsp. finely chopped basil — 1 tsp. garlic paste — 1 pound spicy Italian sausage — 1 (15 oz.) can tomato sauce — 1/4 cup red wine (Jessica used Merlot) — Salt — 4 hot dog buns — 4 slices mozzarella cheese — 8 slices provolone cheese — 1/8 cup chopped red onion Instructions: 1. First, make a butter compound by mashing together butter, parsley, 1/4 cup of basil, and garlic paste. Set aside. 2. Brown sausage. Add tomato sauce, stir. Add wine, stir. Let mixture simmer over medium-low heat for 15 minutes. 3. Remove sausage from heat, stir in 1 tbsp. of basil and salt to taste. Set aside. 4. Spread butter compound inside and on top of buns. Brown buns in the oven. 5. Once buns are browned and butter is melted, tuck one slice of mozzarella into each bun. Spoon sausage mixture into each bun on top of mozzarella. Top each sandwich with two slices of provolone cheese. Melt cheese to a slight bubble in the oven. 6. Top sandwiches with red onion and last tbsp. of basil. You're done! Inspired by: Little Kitchen. It's the spookiest time of the year and that means you'll need some spooky desserts to make sure your party guests don't become angry ghouls. That's why we always turn to our practitioner of the delicious arts, Jessica Hord. Once you make "Spooky Pie," you'll want to have some year round. You'll Need: — 1 (14.3 oz.) regular Oreo cookies, divided — 8 tbsp. melted butter — 8 oz. softened cream cheese — 1 (15 oz.) can pumpkin puree — 2 (3.4 oz) boxes instant vanilla pudding — 2 cups whole milk — 2 tsp. pumpkin pie spice — 1 (8oz.) thawed tub whipped topping Instructions: 1. Crunch nine cookies and set aside. Crunch the remainder of the package and mix with melted butter in a 13x9 inch pan. Press mixture firmly into the bottom of the pan. 2. In a large mixing bowl, beat cream cheese and pumpkin until smooth. Add vanilla pudding, milk, and pumpkin pie spice and mix until blended. 3. Spread mixture over cookie crust, top with a layer of whipped topping and sprinkle the Oreos you set aside on top. Cover and chill for at least four hours and you're done!
