If your tummies are full and satisfied for the day, use your leftover Thanksgiving stuffing for a tasty breakfast tomorrow morning. Using ingredients you most likely already have in the fridge, you can create these tasty Stuffing Cakes in a few simple steps. Our creative RightThisMinute chef, Jessica Hord takes eggs, bacon, gravy and/or syrup to make this delicious morning meal. Check out the step-by-step instructions below!
You'll Need:
— 2 cups leftover stuffing
— 6 large eggs
— 1 cup of shredded cheese (Jessica used gouda)
— 2 tbsp extra virgin olive oil
— bacon
— turkey gravy or maple syrup
— Optional: salt, pepper, parsley
Instructions:
1. Lightly beat one egg and mix into leftover stuffing.
2. Stir in shredded cheese.
3. Scoop up 1/3 cup of the mixture and shape into a patty. Continue this process until you've used all of the mixture.
4. Heat oil in a skillet over medium heat. Add patties a few at a time and gently fry until sides are lightly browned and crisp.
5. Top cakes with bacon, gravy or syrup, an over-easy egg and any seasonings you'd like to use. You're done!
